ผัดมันกุ้ง

Pad bai kaprao ผัดใบกะเพราใส่ หมูสับ ปลาหมึก เนื้อปู


Ingredients

1/2 cup mince pork
1/3 cup crabmeat
1/3 cup squid
1 teaspoon fish source
1 teaspoon Soy source
1/4 teaspoon Sugar
1 tablespoon vegetable oil
3 garlic cloves, chopped fine
1/4 cup water
Long green beans chopped
Basil
Chili

Directions
1 Heat pot add vegetable oil and heat until hot but not smoking.
2 Add garlic and stir-fry until golden. Add mince pork, crapmeat, squid, long green beans and cook, stirring constantly to prevent sticking, until all pork, crapment and squid are opaque white, 3 to 4 minutes.
3 Add chilies,a little of water, fish sauce, sugar, soy sauce and stir-fry until combined. Add basil and stir-fry 30 seconds
4 Taste it and ready to serve.





Tum kha gai ต้มข่าไก่



Ingredients
2 peices of Chicken Breast
100 ml Water
150 ml Coconut Milk
30 gms Galanga
30 gms Lemon Grass
30 gms Kaffir Leaves
1 Sprig Coriander
25 gms Bird Chilli
1 Tablespoon Lemon Juice
1 Teaspoon Salt
3 Tablespoons Fish Sauce

Directions
1. Clean the chicken breast and chop it into strips.
2. Chop the galanga & lemon grass.
3. Pound the bird chilles in a mortar.
4. Put the coconut milk in pan and bring to the boil.
5. When coconut milk is boiling, add the galanga, lemon grass, kaffir and salt.(If you have tom kha gai paste just add into coconut milk and boil.)
6. And add the chicken, fish sauce, lemon juice and coconut milk and simmer for 5 minutes until the chicken is thoroughly cooked.
7. Add chilles, coriander and in simmer for a further 1 minute to let the flavours spread through the soup.

Red curry with Bamboo








เครื่องปรุงมีดังนี้ค่ะ

1.หน่อไม้ดอง
2.เนื้อไก่
3.ใบมะกรูด
4.น้ำกะทิ
5.พริกแกงเผ็ด(ถ้าจะตำเองก็ได้)
6.พริกแดง
7.น้ำปลา
8.น้ำตาล
9.โหระพา
10.น้ำมันพืช

วิธีปรุง
1. ตั้งกะทะ ใส่น้ำมัน รอให้ร้อน ใส่กระเทียมลงเจียว ถ้ามีนะคะ ตามด้วยน้ำพริกแกงเผ็ด ผัดให้สุก ให้มีกลิ่นหอม
2. ใส่เนื้อไก่ลงผัด ตามด้วยน้ำกะทิ ตั้งไฟ จนกะทิแตกมัน แล้วใส่หน่อไม้ดอง
3. รอจนหน่อไม้ดองสุก โรยหน้าด้วยใบมะกรูด และพริกแดง
4. ปรุงรสตามชอบค่ะ

Ingredients
1 cup soaked bamboo
1 red chili paste
1 1/2 teaspoons vegetable oil
1 onion, diced
1 piece of chicken breast
1 tablespoon fish sauce
1 tablespoon white sugar (If you like sweet)
1/4 cup coarsely chopped cilantro
1/4 cup of kaffir lime leaf
1/4 cup of basil
1 cup of coconut milk

Directions

1. Heat oil in a wok or large heavy skillet over medium heat. Saute onion and garlic until onion is soft and translucent,
2. Add red chili paste stir for a cuuple minutes, add slice chicken breasts about 3-4 minutes stiring see if it's cook or until pink.
3. Add coconut milk wait to see float up during boiling then add bamboo. Add fish sauce, sugar and cook without stirring for 15 minutes.
4. Add basil and kaffir lime leaf at the end.
5. Ready to serve.

Pad Thai ผัดไท จ้า


Ingredients

1 (8 ounce) package rice noodles
1 1/2 teaspoons vegetable oil
1 onion, diced
1 teaspoon minced garlic
1 piece of chicken breast
1 tablespoon fish sauce
1 tablespoon white sugar (If you like sweet)
1 tablespoon lemon juice
1 eggs, lightly beaten
1/4 pound bean sprouts
1/2 cup unsalted dry-roasted peanuts, chopped
1/4 pound bean sprouts
1 lemon, sliced
1/2 cup chopped peanuts
1/4 cup coarsely chopped cilantro


Directions

1. In a medium bowl, soak the noodles in cold water for 15 min; drain. Cover noodles with hot water, and soak for 15 minutes; drain. Rinse with cold water, drain, and set aside.
2. Heat oil in a wok or large heavy skillet over medium heat. Saute onion and garlic until onion is soft and translucent, about 5 minutes. Add slice chicken breast, and cook until pink. Add fish sauce, sugar, lemon juice and soy souce. Pour in the beaten egg, and cook without stirring until egg is partially set. Add drained noodles, 1/4 pound bean sprouts, and 1/2 cup peanuts. Mix while cooking until noodles are tender.
3. Transfer to a serving plate, and scatter noodles with 1/4 cup bean sprouts, lemon slices, 1/2 cup chopped peanuts and cilantro.
