Chicken, mashed potato and cheese















Ingredients :

1. Chicken breast 3 pieces chopped ( minced pork a little bit there too)
2. Mashed potato
3. Parslay
4. Salt
5. Wheat flour 1/3 cup
6. Milk 2 2/3 cup
7. Butter 4 tablespoon
8. Pepper powder
9. Cheese



Directions :
1. Get mashed potato ready (your own good recipe)
2. Making source :
Warm up the bowl with butter (with low heat) then add wheat flour stir well and add milk, parslay, pepper powder, salt.
3. Then put all the source on top of chicken
4. Put mash potato after the source
5. Set oven at 350F and bake it for 40 minutes or until turned gold then take the chicken out, put cheese on top and back into oven for 10 more minutes. Finally you will have a nice chicken with mash potato and cheese and ready to serve.

Tip : Sweet corn and green bean are nice to have with... ;)

Stir Fried Egg Noodle With Chicken




Ingredients :

1. Chicken breast
2. Garlic smashed
3. Egg noodle
4. Soy sauce
5. Vegetable oil
6. Oyster sauce
7. Mixed vegetable
8. Pepper powder
9. fish sauce



Directions :
1. Heat up the pan, add suffient amount of oil and when the oil is hot add garlice smashed then chicken breast chopped to stir fry. Crush the chicken against the pan with the spatula in order the spread out the chicken then season with oyster sauce and stir fry until cooked.

2. Add mixed vegetable and stir well for a minute or two then add egg noodle. then,season with fish sauce and Soy sauce. Finally add pepper powder stir well and ready to serve.

Jackfruit Smash Salad [Tum ka nun] By Mom







This is my mom's recipe. It's northern food menu. ;)

Ingredients :

1. Young Jackfruit
2. Garlic smashed
3. Minced pork
4. Tomato
5. Vegetable oil
6. Kaffir lime leaf
7. Galangal
8. Coriande
9. Salt
10. Shrimp Paste Sauce grilled
11. Fish sauce

Directions :
1. Pill pare the young jackfrute then chop young jackfruit to the small peices and boil until cook and that will take sometime, before its cook add tomatos to boil in the pot together.
2. Pestle jackfruit in mortar or you can use blender then add tomatos and put them in the blow.
3. Put "Dried Hot Pepper grilled", shrimp paste sauce grilled, garlic, galangal and a little bit of salt in the mortar and pestle or blender them together. Now you have the paste and ready for the next step.
4 . Heat up the pan, add suffient amount of oil and when the oil is hot add garlice smashed then add paste stir for a min then minced pork to stir fry. Crush the minced pork against the pan with the spatula in order the spread out the pork and stir fry until cooked.
5. Then add smashed jackfruit that you have in the blow and stir well together. Then, season with fish sauce. Finally add Kaffir lime leaf slice to small pieces and coriande stir well and ready to serve. ;)

Stir Fried Pickling Sour Bamboo Shoot And Minced Pork [By Mom]







Ingredients :

1. Pickling sour bamboo Shoot
2. Garlic smashed
3. Minced pork
4. Soy sauce
5. Vegetable oil
6. Oyster sauce
7. Sweet basil
8. Coriande
9. fish sauce



Directions :
1. Heat up the pan, add suffient amount of oil and when the oil is hot add garlice smashed then minced pork to stir fry. Crush the minced pork against the pan with the spatula in order the spread out the pork and stir fry until cooked.

2. Add Pickling sour bamboo Shoots and stir well. Then, season with fish sauce, Soy sauce and oyster sauce. Finally add sweet basil and coriande stir well and ready to serve. ;)

Sweet and Sour Sauce Fried with Chicken ไก่ผัดเปรี้ยวหวาน







Ingredients:

1. 400 grams of Chicken, cut into bite sized pieces

2. 1/2 cup plum sauce

3. 1/3 cup sugar

4. 1 onion, sliced

5. 2 tomatoes, sliced

6. pineapple, cut into small cubes

7. 1 tablespoon soy sauce

8. 1/2 teaspoon concentrated tamarind paste

9. 1 cup vegetable oil for deep frying

10. Cucumber sliced to small pieces

Preparations :

1. Heat oil in a pan on medium heat, when oil is hot, add chicken until cooked

2. Add plum sauce and sugar in another wok on medium-low heat, stir until sugar dissolved, add soy sauce and tamarind paste, mix well.

3. Add chicken, onion, sliced tomatoes, pineapples in sweet & sour sauce,cucumber and continue stirring in the sauce until they stick together. Transfer to a serving dish.

Chicken Green Curry







Ingredients :

1. Vegetable oil 2 tbsp
2. Palm heart
3. Coconut milk 2 cups or 16 fl.oz.
4. Green curry paste, (Kaeng khiao wan paste) 3-4 heaped tbsp.
5. Chicken, sliced 1 1/2 lbs/ 24 oz.
6. Fish sauce 3-4 tbsp.
7. Sweet basil leaves, (bai horapha) 1/2 cup

Directions:

1. Heat up the oil in a pan large enough to hold the curry. Once the oil is hot, lower the heat and add the curry paste and fry the paste over a low heat, separating the lumps as much as possible. Stir constantly and do not let the curry burn.

2. Add a little of the coconut milk to the curry paste to soften the paste making it more spread able. Add more coconut milk saving about half for later use. Bring the sauce to the boil, scraping the bottom of the pot to prevent scorching.

3. Add the sliced chicken and stir. Bring the curry back to a boil and cook the chicken until done. Add palm heart stir for 3 minutes. Add the rest of the coconut milk, bring the curry back. to boil and season with fish sauce and sugar. Before serving, add Thai basil leaves and garnish with red spur chili peppers.

4. Serve this dish with rice

Clear Soup ToFu






Ingredients:

1. Minced pork
2. Soft Egg Tofu (soya bean curd)
3. Chinese cabbage
4. Soy sauce
5. green onions
6. sprigs cilantro
7. pepper powder
8. Carrot
9. celery
10. Glass Noodle


Directions:

1. Season ground pork with thin soy sauce (or fish sauce), oyster sauce, and ground pepper. Mix thoroughly and set aside.
2.Cut Chinese cabbage, carrot, celery, green onions and cilantro roots, wash dirt, pat dry, and cut into 1" lenght. Then, cut egg tofu crosswise about 1 cm. thick.
3.Pour water in a pot, bring to boil on medium-high heat, add chicken broth cube and cut egg tofu. When the soup is boiling, spoon ground pork about 1 tsp, and add into the pot.
4. Season with thin soy sauce (or fish sauce add carrot wait until cooked, then add Chinese cabbage,allow boiling again, then add glass noodle, cilantro, celery and remove from heat.
5.Put the soup in a serving bowl, sprinkle with ground pepper, and serve immediately.

Stir Fried Palm Heart : Pad Yod Maphrao






Ingredients :

1. palm heart or coconut tree heart. (Not sure about the name)
2. Garlic smashed
3. Minced pork
4. Soy sauce
5. Vegetable oil
6. Oyster sauce
7. Pepper powder
8. Carrot


Directions :
1. Fry the garlic in the oil over high heat. When garlic starts to turn brown, drop minced pork in stir until it cooked then add palm heart, carrot stir constantly for a couple minutes. The juice will start to come out. Keep stirring until all the juice is gone. It might take a couple of minutes.

2. Add soy sauce and oyster sauce. Stir all ingredients together then remove from the fire and put it in the serving plate or dishes and sprinkle on top with pepper powder. Serve hot with rice.

Stir fried mixed vegetable










Ingredients :
1. Mushroom
2. Garlic smashed
3. Minced pork
4. Soy sauce
5. Vegetable oil
6. Oyster sauce
7. Pepper powder
8. Carrot
9. Green onion
10. Long green bean chopped

Directions :
1. Fry the garlic in the oil over high heat. When garlic starts to turn brown, drop minced pork in stir until it cooked then add carrot, long green bean stir constantly for a couple minutes then add mushroom. The juice will start to come out. Keep stirring until all the juice is gone. It might take a couple of minutes.

2. Add soy sauce and oyster sauce. Stir all ingredients together then remove from the fire and put it in the serving plate or dishes and sprinkle on top with pepper powder. Serve hot with rice.

Fried Egg With Chicken









Ingredients :
1. Eggs
2. Garlic smashed

Directions :
1. Put eggs, minced chicken, carrot,green onion and corriander and mix together.
2. Fry the garlic in the oil over high heat. When garlic starts to turn brown, drop chicken in stir until chicken cooked then eggs and carrot. Stir constantly. The juice will start to come out. Keep stirring until all the juice is gone. It might take a couple of minutes.

3. Add soy sauce and oyster sauce. Stir all ingredients together then remove from the fire and put it in the serving plate or dishes and sprinkle on top with pepper powder. Serve hot with rice.

Stir fried long green bean








Ingredients :
1. Long green bean chopped
2. Garlic smashed
3. Minced chicken
4. Soy sauce
5. Vegetable oil
6. Oyster sauce
7. Peper powder
8. Carrot
9. Thai chili, minced (for spicy taste)

Directions :
1. Fry the garlic and chili pepper in oil over high heat. When garlic starts to turn brown, drop chicken in then long green beans and carrot, long green bean chopped. Stir constantly. The juice will start to come out. Keep stirring until all the juice is gone. It might take a couple of minutes.

2. Add soy sauce and oyster sauce. Then add Thai chilli. Stir all ingredients together then remove from the fire and put it in the serving plate or dishes. Serve hot with rice.

Stir-fried seafood and basil









Ingredients :
1. Holy basil
2. Garlic smashed
3. Prawn and squid
4. Soy sauce
5. Vegetable oil
6. Oyster sauce
7. Sugar
8. Carrot
9. Thai chili, minced (for spicy taste)
10. Long green bean

Directions :
1. Mince garlic and chili together. Clean and pick kra-prao leaves (holy basil) from their stem. It may appear like a lot of leaves, but the leaves will shrink when cooked and this dish's flavor comes from the leaves.

2. Fry the garlic and chili pepper in oil over high heat. When garlic starts to turn brown, drop prawn and squid in and carrot, long green bean chopped. Stir constantly. The juice will start to come out. Keep stirring until all the juice is gone. It might take a couple of minutes.

3. Add sugar, soy sauce and oyster sauce. Then add Thai basil. Quickly turn it over a few times to mix the leaves with the seafood and other vegetables then remove from the fire and put it in the serving plate or dishes. Serve hot with rice. Normally in Thailand, pad kra prao is served with a small bowl of chili pepper in fish sauce or fried egg.(sunny-side up egg).

Congee (Rice Porridge)







Ingredients:
1. Rice
2. Egg(s)
3. Ginger slices
4. Soy sauce
5. Fish sauce (If like)
6. Peper
7. A little bit of salt
Directions :
1. Fill a pot with 4 cups of water. Add rice to pot Cook rice on low for 45 minutes to an hour, or until rice is soft enough for your taste. Season with salt
2. Put rice soup gently on top of eggs. The heat from the soup will cook the eggs.
3. Add fresh ginger slices and pepper to taste.
4. Serve immediately.

Tom Yum Noodle Soup







Ingredients :
1. Noodles
2. Coconut milk
3. Egg
4. Mushroom
5. Carrot
6. Minced pork
7. lime juice
8. Thai chilli paste

2. Prepare pot of water to simmer/boil add thai chilli paste, coconut milk then minced pork wait for a few minutes add egg and carrot, mushrooms
